Grilled Organic Halloumi, Fig & Kale Salad
A beautifully balanced summer dish that celebrates bold, fresh flavours and simple quality ingredients.
Salty, golden grilled halloumi pairs perfectly with sweet ripe figs, vibrant kale, and a light honey mustard dressing for a salad that feels both elegant and satisfying. Using our 150g Organic Halloumi, this recipe is ideal for light lunches, alfresco dining, or as a refined side alongside your summer BBQ.
Serves 2–3
Ingredients
- 1 pack The Organic Butchery Organic Halloumi (150g)
- 4–5 fresh figs, quartered
- 100g kale
- 1 small handful rocket
- 30g toasted walnuts or pistachios
- 1 tbsp olive oil
- Sea salt
- Freshly cracked black pepper
For the dressing
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Juice of ½ lemon
Method
Prepare the kale
Remove any tough stalks from the kale and tear into bite-sized pieces.
Place in a large bowl with a small drizzle of olive oil and a squeeze of lemon juice, then gently massage for 2–3 minutes until softened and vibrant.
Add the rocket and set aside.
Make the dressing
Whisk together the Dijon mustard, honey, olive oil, balsamic vinegar, and lemon juice until smooth.
Season lightly with sea salt and black pepper.
Grill the halloumi
Slice the 150g Organic Halloumi into thick pieces.
Heat a griddle pan or frying pan over medium-high heat and cook for 2–3 minutes on each side until beautifully golden with crisp edges.
Assemble
Arrange the kale and rocket on a serving platter.
Scatter over the fresh figs and toasted nuts.
Top with the warm grilled halloumi and generously drizzle over the dressing.
Finish with an extra crack of black pepper.
Serve
Best enjoyed immediately while the halloumi is still warm.
