Shelley's Ultimate Ribeye Steak Sandwich

Using beautifully marbled, grass-fed organic ribeye steaks from The Organic Butchery, this recipe brings together simple, quality ingredients to create the perfect balance of richness, freshness, and flavour.

Ingredients

  • Organic Ribeye Steaks from The Organic Butchery
  • Ciabatta
  • Extra virgin olive oil
  • 1 whole head of garlic
  • Rocket
  • Cherry tomatoes
  • Fresh basil leaves
  • Parmesan
  • Balsamic glaze
  • Sea salt & black pepper
  • Butter (for basting)

Method

1. Roast the garlic
Slice the top from a whole head of garlic, drizzle with olive oil, wrap in foil, and roast until soft and golden. Once cooled slightly, squeeze out the softened cloves to create a rich garlic paste.

2. Prepare the tomatoes
Place cherry tomatoes in a roasting dish with a generous drizzle of extra virgin olive oil, sea salt, and cracked black pepper. Roast until softened and lightly blistered.

3. Toast the ciabatta
Lightly toast your ciabatta until golden, then drizzle with extra virgin olive oil.

4. Cook the ribeye
Pan-fry your organic ribeye steak in a hot pan, basting generously with butter as it cooks. Rest well, then slice into strips.

5. Build the sandwich
Spread the roasted garlic generously over the ciabatta.

Layer with fresh rocket, followed by the sliced ribeye steak.

Top with the roasted cherry tomatoes, a few fresh basil leaves, and a generous grating of Parmesan (the more, the better).

Finish with a drizzle of balsamic glaze.

Serve immediately
