Greek-Style Organic Lamb Shoulder Chops

If you're looking for a simple yet flavour-packed summer BBQ recipe, these Greek-style organic lamb shoulder chops are hard to beat. Marinated in lemon, garlic and oregano, then cooked over the barbecue until beautifully charred, they deliver everything you want from outdoor cooking — juicy, tender meat with fresh Mediterranean flavours.
Organic lamb shoulder chops are a fantastic cut for grilling. They cook quickly, remain wonderfully succulent and pair perfectly with bright herbs and citrus.
Serve with plenty of fresh lemon and a Greek-inspired potato salad for an easy meal that's made for warm evenings in the garden.

Ingredients
For the Marinade
- 2 tbsp olive oil
- 4 cloves garlic, minced
- Juice of ½ lemon
- Zest of 1 lemon
- 3 tbsp dried oregano
- Small handful fresh parsley, finely chopped
- Sea salt and freshly ground black pepper
To Serve
- Extra lemon wedges
- Greek-style smashed potato salad (optional)

Method
Place the lamb shoulder chops into a large dish or bowl.
In a separate bowl, mix together the olive oil, garlic, lemon juice, lemon zest, oregano, parsley, salt and black pepper.
Pour the marinade over the lamb chops and coat well on both sides. Cover and leave to marinate for a couple of hours, allowing the flavours to fully develop.
When ready to cook, preheat your barbecue until hot.
Place the lamb shoulder chops directly onto the grill and cook for a few minutes on each side until beautifully charred and cooked through. Lamb shoulder chops are naturally tender and don't require long cooking times.
Once cooked, transfer to a plate, cover loosely with foil and allow to rest for 5–10 minutes before serving.
Finish with extra lemon wedges and serve alongside a Greek-style smashed potato salad for the perfect summer meal.
