Brown Butter & Sage Organic Pork Chops

Few combinations are as timeless as pork, butter and sage. These beautifully golden organic pork chops are first marinated with fresh lemon, garlic and olive oil before being pan-fried and finished with a rich brown butter and sage baste. Served with crispy roast potatoes and steamed green beans, this is a simple yet elegant meal that's perfect for any day of the week.

Serves 4
Ingredients
For the Pork Chops
- 4 Organic Butchery Organic Pork Chops
- A splash of olive oil
- Juice of ½ lemon
- Zest of 1 lemon
- 4 cloves garlic, minced
- Sea salt and freshly ground black pepper
For the Brown Butter & Sage
- A generous knob of butter
- A handful of fresh sage leaves
To Serve
- Crispy roast potatoes
- Steamed green beans
Method

Place the pork chops into a shallow dish.
Mix together the olive oil, lemon juice, lemon zest, garlic, salt and black pepper, then pour over the pork chops. Coat well, cover and leave to marinate for at least one hour.
When ready to cook, remove the chops from the marinade and gently shake off any excess.
Heat a large frying pan over a high heat and begin by standing the pork chops on their fat edge. Allow the fat to slowly render and crisp until golden.
Lay the chops flat and cook for a few minutes on each side until nicely caramelised.
Reduce the heat slightly, then add the butter and fresh sage leaves to the pan. As the butter begins to foam and turn lightly golden, continuously spoon it over the pork chops, allowing the sage to become crisp and fragrant while basting the meat until fully cooked.
Transfer the pork chops to serving plates, spoon over the brown butter and crispy sage leaves, and serve alongside crispy roast potatoes and steamed green beans.
