Ingredients (Serves 4):
- 4 organic beef burgers
- 4 brioche buns
- 4 slices cheddar cheese
- 1 tomato, sliced
- 1 small red onion, sliced
- Lettuce leaves
- Burger relish or ketchup
- Salt & pepper
Method:
Preheat your BBQ or grill to medium-high heat. Season the burgers lightly with salt and pepper, then cook for 4–5 minutes on each side until nicely browned and cooked through. Add cheese for the final minute to melt. Toast the buns lightly, then assemble with lettuce, tomato, onion, burger, and sauce. Serve immediately.
2. BBQ Smoked Brisket Flat
Ingredients (Serves 4–6):
- 1kg smoked brisket flat
- 2 tbsp BBQ rub or black pepper
- 100ml BBQ sauce
- 50ml apple juice
Method:
Preheat oven or BBQ to 140°C. Season the brisket, wrap in foil with apple juice, and cook low and slow for 3–4 hours until tender. Unwrap, brush with BBQ sauce, and cook uncovered for 20–30 minutes to caramelise. Rest before slicing thinly.

- 4 flat iron steaks

Chimichurri:
- 1 bunch parsley, finely chopped
- 2 cloves garlic, minced

Method:
Mix chimichurri ingredients and set aside. Rub steaks with oil, season well, and grill on high heat for 3–4 minutes per side. Rest for 5 minutes, slice, and serve with chimichurri.
4. Sticky BBQ Chicken Wings
Ingredients (Serves 4):
- 1kg chicken wings
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 100ml BBQ sauce
- 1 tbsp honey
Method:
Preheat oven to 200°C or BBQ to medium. Toss wings in oil and seasoning. Cook for 30–35 minutes until crispy. Mix BBQ sauce and honey, toss wings, and cook for another 10 minutes until sticky and caramelised.
5. Herb-Marinated Lamb Cutlets
Ingredients (Serves 2–3):
- 400g lamb cutlets
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1 tbsp chopped rosemary
- Zest of 1 lemon
Method:
Mix marinade and coat lamb. Leave for at least 1 hour. Grill or BBQ on high heat for 2–3 minutes per side until pink. Rest briefly before serving.
6. Sausages with Caramelised Onions
Ingredients (Serves 4):
- 8 pork sausages
- 2 onions, sliced
- 1 tbsp butter
- 4 rolls
- Mustard
Method:
Cook sausages on BBQ or grill for 15–20 minutes, turning regularly. Meanwhile, cook onions in butter on low heat for 20 minutes until soft and caramelised. Serve sausages in rolls topped with onions and mustard.
7. Slow Cooked Beef Short Ribs
Ingredients (Serves 2–3):
- 600g beef short ribs
- 300ml beef stock
- 2 cloves garlic
- 1 sprig thyme
Method:
Preheat oven to 150°C. Place ribs in a roasting dish with stock, garlic, and thyme. Cover tightly and cook for 3 hours until tender. Finish on BBQ or under grill for a crispy exterior.
8. Sticky Pork Loin Steaks
Ingredients (Serves 2):
- 350g organic pork loin steaks
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp wholegrain mustard
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1 tbsp olive oil
Method:
Mix together the soy sauce, honey, mustard, garlic, and ginger to create a marinade. Coat the pork loin steaks well and leave to marinate for at least 30 minutes (or up to a few hours in the fridge for deeper flavour).
Preheat your BBQ or grill to medium-high heat. Lightly oil the steaks, then place them onto the grill. Cook for 4–5 minutes on each side, turning occasionally and brushing with any remaining marinade as they cook.
Once cooked through and slightly caramelised on the outside, remove from the heat and allow to rest for a few minutes before serving.
