Soy Braised Chicken with Ginger & Spring Onion Sauce

This flavour-packed dish takes organic chicken to another level. Gently braised in a rich, savoury soy-based sauce, the chicken becomes tender, juicy, and full of depth. Paired with a vibrant ginger and spring onion sauce, it’s a simple yet impressive meal—perfect served over rice with fresh greens.
🛒 Ingredients (Serves 4)
For the Chicken
- 8 organic chicken thighs (skin on, bone in)
- 4 tbsp light soy sauce
- 3 tbsp dark soy sauce
- 3 tbsp oyster sauce
- 2 tbsp Shaoxing rice wine
- 1 tbsp sugar
- 1 tsp salt
- 1–2 bunches spring onions, cut into halves
- 8 slices fresh ginger
- 200ml water
For the Ginger & Spring Onion Sauce
- 2–3 tbsp fresh ginger, grated
- 1 bunch spring onions, finely chopped
- 3 tbsp neutral oil
- 1 tsp salt
👩🍳 Method
1. Marinate the Chicken
In a bowl, mix together the light soy sauce, dark soy sauce, oyster sauce, Shaoxing rice wine, sugar, and salt.
Pour the marinade over the chicken thighs, ensuring they are well coated. Cover and leave to marinate in the fridge for at least 3 hours, or ideally overnight for maximum flavour.
Remove from the fridge 1 hour before cooking to bring to room temperature.
2. Prepare the Braise
In a wide, low pan with a lid, lay the spring onions and slices of ginger across the base. Place the marinated chicken thighs on top, then pour over the marinade. Add 200ml of water to the pan.
Bring to the boil, then reduce to a gentle simmer. Cover and cook for 1 hour, basting the chicken occasionally with the cooking liquid to keep it moist and flavourful.
3. Make the Ginger & Spring Onion Sauce
Place the grated ginger and chopped spring onions into a heatproof bowl and mix with the salt.
Heat the oil until hot, then carefully pour it over the mixture. Stir to combine—this will release a fragrant, aromatic sauce.
4. Serve
Serve the chicken thighs over steamed rice, spooning over plenty of the rich cooking juices. Top generously with the ginger and spring onion sauce.

Pair with pan-fried pak choi or other greens for a balanced, comforting meal.
