The cut

Organic pork tenderloin is the prize cut from the pork carcass. As lean as can be, it's delicately flavoured and – as the name suggests – very, very tender. Situated high along the side of the pig, running parallel to the spine, the tenderloin is otherwise known as the pork fillet. It's a muscle that hasn't worked very hard during the animal's life which gives it a buttery soft texture – the same as you'd expect from beef fillet. Our skilled butchers have trimmed the long tenderloin muscle leaving you the decision of cooking it whole or sliced into medallions.

Pigs grown in an organic system are some of the healthiest you'll find. As they live free-range lives in sociable family groups and enjoy an organic diet, they're untainted by chemicals or growth promoters. Medication is kept to a minimum on organic farms, so can be certain your pork bones come from a pig that's never been routinely dosed with antibiotics. A natural, outdoor lifestyle means our pigs develop robust immune systems, and that benefit is passed to you.

Storage Information

Once your order arrives, unpack your fresh products and place them in the fridge at 0–5°C as soon as possible.

The minimum shelf life for each fresh product is shown in the description and includes your delivery day. Every pack is also labelled with its own use-by date. Please enjoy or freeze your fresh meat before this date.

If you don't plan to use your fresh meat before the use-by date, we recommend freezing it as soon as possible after delivery to preserve its quality. Defrost thoroughly in the refrigerator before cooking and do not refreeze once fully thawed.

For the best quality:

  • Store refrigerated at 0–5°C.
  • Freeze before the use-by date if not using fresh.
  • Defrost fully in the fridge before cooking.
  • Do not refreeze once fully thawed.
  • Always cook thoroughly before eating.
