Ultimate Crispy Chicken Burger
Golden, crispy and packed with flavour, this homemade crispy chicken burger is the perfect alternative to a takeaway. Using a 220g Organic Chicken Breast from The Organic Butchery, it's coated in a seasoned crunchy crumb before being fried until golden and finished in the oven for juicy, tender chicken every time.

Ingredients
For the Chicken
- 1 x 220g Organic Chicken Breast, sliced horizontally into 2 even fillets
- 50g plain flour
- 2 eggs, beaten
- 100g panko breadcrumbs
- Vegetable oil, for frying
Seasoned Coating
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried oregano
- ½ tsp dried thyme
- ½ tsp cayenne pepper (optional)
- 1 tsp sea salt
- ½ tsp freshly ground black pepper
To Serve
- 2 brioche burger buns
- Gem lettuce
- 2 slices mature Cheddar cheese (optional)
- 2 slices tomato
- Gherkins
Burger Sauce
- 3 tbsp mayonnaise
- 1 tbsp tomato ketchup
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp pickle juice (optional)
Method
- Preheat the oven to 200°C (180°C fan).
- Slice the chicken breast horizontally to create 2 even fillets. If needed, gently flatten each fillet between baking paper until approximately 1.5cm thick.
- In one bowl, combine the flour with half of the seasoning mix. Place the beaten eggs in a second bowl, and mix the remaining seasoning with the panko breadcrumbs in a third bowl.
- Coat each chicken fillet in the seasoned flour, then dip into the beaten egg before pressing firmly into the seasoned panko breadcrumbs until completely coated.
- Heat around 1cm of vegetable oil in a large frying pan over a medium heat. Fry the chicken for 3–4 minutes per side until golden and crisp.
- Transfer the chicken to a baking tray and cook in the oven for 8–10 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C.
- Meanwhile, mix together the burger sauce ingredients and lightly toast the brioche buns.
- Spread the burger sauce over the buns, add lettuce, the crispy chicken, cheese if using, tomato and gherkins before placing the bun lid on top.

The Organic Butchery Tip
For an extra crunchy coating, let the breaded chicken rest for 10 minutes before frying. This helps the coating adhere to the chicken, giving you an even crispier finish. If you like a little heat, add a pinch of cayenne pepper to the breadcrumb mixture or drizzle the finished burger with hot honey for a sweet and spicy twist.
