Ingredients
For the Prawns:
-
200g shell-on prawns, defrosted and deveined
-
1 tbsp olive oil
-
3 cloves garlic, minced
-
1 red chilli, finely sliced
-
Handful of fresh parsley, chopped
-
Juice of ½ lemon
For the Ribeye Steak:
-
2 organic grass-fed ribeye steaks, at room temperature
-
Olive oil
-
Salt and freshly ground black pepper
To Serve (optional):
-
Fresh Caesar salad
-
Garlic sourdough croutons
-
Roast potatoes or macaroni & cheese
-
Extra lemon wedges
Method
1. Marinate the Prawns
Defrost and devein the prawns. In a bowl, combine the olive oil, minced garlic, sliced chilli, chopped parsley, and lemon juice. Toss the prawns in the marinade and leave in the fridge for at least 1 hour to soak up the flavours.
2. Prepare the Ribeye Steaks
Drizzle a little olive oil over the steaks and season generously with salt and black pepper. Heat a griddle pan over high heat. Cook the steaks for 2–3 minutes per side for medium (adjust time for your preferred doneness). Once cooked, transfer to a plate and allow to rest for a few minutes to lock in the juices.
3. Cook the Prawns
Heat a frying pan over medium-high heat. Cook the prawns for 2–3 minutes, turning occasionally, until pink and cooked through. Finish with a squeeze of fresh lemon.
4. Serve
Plate the steaks and top with the garlic and chilli prawns. Serve alongside a fresh Caesar salad with garlic sourdough croutons, roast potatoes, or mac and cheese for a complete surf & turf feast.
Tip: The prawns cook very quickly, so make sure your sides are ready to serve when the seafood hits the pan.
