Starters

1. Spiced Organic Duck Wings with Orange & Honey Glaze

A festive twist on a classic, perfect for sharing.

Ingredients

  • 1kg organic duck wings

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp ground cinnamon

  • Salt & pepper

  • Zest of 1 orange

  • 2 tbsp honey

Method

  1. Preheat oven to 200°C (fan 180°C).

  2. Toss wings with olive oil, paprika, cinnamon, salt, and pepper.

  3. Roast for 35–40 minutes, turning halfway.

  4. Mix orange zest and honey, brush over wings, and roast a further 5 minutes. Serve warm.


2. Mini Venison Tartlets with Caramelised Onion

Rich and indulgent, yet elegant enough for a party starter.

Ingredients

  • 200g minced wild venison

  • 1 sheet puff pastry

  • 1 small onion, finely sliced

  • 1 tbsp olive oil

  • Salt & pepper

  • 1 egg, beaten

Method

  1. Sauté onions in olive oil until soft and caramelised.

  2. Mix venison with salt and pepper.

  3. Cut pastry into small squares, top with venison mixture and onions, fold edges, and brush with egg.

  4. Bake at 200°C (fan 180°C) for 15–20 minutes until golden.


3. Organic Pork & Sage Croquettes

Crispy, creamy bites packed with flavour — perfect for grazing.

Ingredients

  • 300g cooked organic pork shoulder, shredded

  • 2 tbsp fresh sage, chopped

  • 50g breadcrumbs

  • 1 egg

  • 2 tbsp cream

  • Oil for frying

Method

  1. Mix pork, sage, cream, and half the egg until combined.

  2. Shape into small logs, dip in remaining egg, coat in breadcrumbs.

  3. Fry in hot oil until golden. Drain and serve warm.

Ingredients

Method

  2. Roast in oven at 180°C (fan 160°C) for 20–25 minutes for medium-rare.

  3. Rest 10 minutes.

  4. Deglaze pan with red wine, reduce, whisk in butter, and serve over slices.


2. Slow-Roasted Organic Lamb Leg with Garlic & Rosemary

Ingredients

  • 1.8–2kg organic lamb leg

  • 4 garlic cloves, sliced

  • 2 sprigs rosemary

  • Olive oil

  • Salt & pepper

Method

  1. Preheat oven to 160°C (fan).

  2. Rub lamb with olive oil, garlic, rosemary, salt, and pepper.

  3. Roast for 2.5–3 hours until tender.

  4. Rest for 15 minutes, carve, and serve with pan juices.


3. Organic Pork Tenderloin with Apple & Sage

Ingredients

Method

  1. Preheat oven to 180°C (fan 160°C).

  2. Season pork and sear in hot pan.

  3. Transfer to oven with apple slices and sage, roast for 25–30 minutes.

  4. Rest 5–10 minutes, slice, and serve with roasted apples.


4. Wild Venison Loin with Juniper & Redcurrant Sauce

Ingredients

  • 2 wild venison loins

  • 1 tbsp olive oil

  • Salt & pepper

  • 100ml red wine

  • 1 tbsp redcurrant jelly

  • 1 tsp crushed juniper berries

Method

  1. Season venison and sear in a hot pan 2 minutes per side.

  2. Roast in oven at 180°C (fan 160°C) for 8–10 minutes for medium-rare.

  3. Rest for 5 minutes.
