Fortified Beef & Tomato Ragu

This rich, slow-simmered ragu is the perfect introduction to fortified mince. By blending organic beef with nutrient-dense liver and heart, you get a deeply savoury sauce that’s full of flavour, naturally high in iron and protein, and ideal for feeding the whole family — without overpowering offal flavours.

Serves 3–4


Ingredients

  • 400g Organic Fortified Beef Mince (beef, liver & heart)

  • 1 tbsp olive oil

  • 1 onion, finely diced

  • 1 carrot, finely diced

  • 1 celery stick, finely diced

  • 2 garlic cloves, crushed

  • 2 tbsp tomato purée

  • 1 x 400g tin chopped tomatoes

  • 150ml beef stock

  • 1 tsp dried oregano

  • 1 bay leaf

  • Sea salt & cracked black pepper

To Finish (Optional)

  • Fresh basil or parsley, finely chopped

  • Grated organic hard cheese


Method

  1. Soften the vegetables
    Heat the olive oil in a large saucepan over medium heat. Add the onion, carrot and celery and cook gently for 8–10 minutes until soft and fragrant.

  2. Add garlic & mince
    Stir in the garlic and cook for 30 seconds. Add the fortified beef mince, breaking it up with a spoon. Cook for 5–7 minutes until browned all over.

  3. Build the sauce
    Stir in the tomato purée and cook for 1–2 minutes to deepen the flavour. Add the chopped tomatoes, beef stock, oregano and bay leaf.

  4. Simmer gently
    Bring to a light simmer, cover partially, and cook for 25–30 minutes, stirring occasionally, until rich and thickened.

  5. Season & finish
    Remove the bay leaf and season to taste with salt and pepper. Scatter with fresh herbs before serving.


Serving Suggestions

  • Toss through tagliatelle or spaghetti

  • Serve over creamy mash or polenta

  • Use as a base for lasagne or cottage pie
