Fortified Beef Mince Lasagna

A classic family favourite, gently upgraded with extra nutrition. Our organic fortified beef mince contains hidden offal, making this lasagna rich in iron, B vitamins and essential minerals — perfect for winter nourishment without changing how you cook.

Ingredients

For the beef ragu

  • 500g The Organic Butchery Organic Fortified Beef Mince

  • 1 tbsp organic olive oil

  • 1 onion, finely chopped

  • 1 carrot, finely diced

  • 1 celery stick, finely diced

  • 2 cloves garlic, crushed

  • 2 tbsp tomato purée

  • 1 x 400g tin chopped tomatoes

  • 150ml organic beef stock or broth

  • 1 tsp dried oregano or thyme

  • Sea salt and black pepper, to taste

For the white sauce

  • 50g butter

  • 50g plain flour

  • 600ml whole milk

  • A pinch of nutmeg

  • Sea salt and black pepper

To assemble

  • Lasagna sheets (fresh or dried)

  • 75g grated cheese (cheddar, mozzarella or parmesan)


Method

1. Make the beef ragu

  1. Heat the olive oil in a large pan over a medium heat.

  2. Add the onion, carrot and celery and cook gently for 8–10 minutes until softened.

  3. Stir in the garlic and cook for 1 minute.

  4. Add the organic fortified beef mince, breaking it up with a spoon. Cook until browned all over.

  5. Stir in the tomato purée, chopped tomatoes, stock, herbs and seasoning.

  6. Reduce to a gentle simmer and cook for 25–30 minutes, until rich and thick. Taste and adjust seasoning.


2. Make the white sauce

  1. Melt the butter in a saucepan over a low heat.

  2. Add the flour and stir continuously for 1–2 minutes to form a roux.

  3. Gradually whisk in the milk, ensuring there are no lumps.

  4. Cook gently, stirring, until thickened.

  5. Season with salt, pepper and a pinch of nutmeg.


3. Assemble the lasagna

  1. Preheat the oven to 180°C (160°C fan).

  2. Spoon a layer of beef ragu into the base of a baking dish.

  3. Add a layer of lasagna sheets, followed by white sauce.

  4. Repeat the layers until all ingredients are used, finishing with white sauce on top.

  5. Sprinkle over the grated cheese.


4. Bake

  1. Cover loosely with foil and bake for 30 minutes.

  2. Remove the foil and bake for a further 15–20 minutes until golden and bubbling.

  3. Allow to rest for 10 minutes before serving.
