Fragrant Lemon & Herb Chicken Skewers
Perfect for: 400g Organic Butchery Diced Chicken
Ingredients
- 400g diced chicken
- 2 tbsp Greek yoghurt
- 2 tbsp olive oil
- Juice and zest of 1 lemon
- 2 garlic cloves, crushed
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh coriander, chopped
- 1 tsp dried oregano
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp turmeric
- 1 tsp sea salt
- ½ tsp freshly ground black pepper
Method
- Mix all the marinade ingredients together.
- Coat the chicken thoroughly.
- Cover and refrigerate for at least 2 hours (overnight is even better).
- Thread onto skewers with peppers, red onion and courgette.
- BBQ over medium-high heat for 10–12 minutes, turning regularly until cooked through.
Serve with:
- Flatbreads
- Tzatziki
- Lemon wedges
- Couscous or fresh salad
