Wild Venison BBQ Kebabs

Make Wild Venison Skewers at Home for Your Next BBQ

Our wild British venison is naturally lean, full of rich flavour and perfect for the barbecue. A simple herb and juniper marinade enhances the meat without overpowering it, creating tender, delicious kebabs that are perfect for summer entertaining.

Prep Time: 15 minutes (+ 2–4 hours marinating)
Cook Time: 8–10 minutes


Ingredients

For the Kebabs


Fragrant Venison Marinade

  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, crushed
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh parsley, chopped
  • 1 tsp juniper berries, lightly crushed
  • 1 tsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • Zest of ½ orange
  • Juice of ½ orange
  • 1 tsp sea salt
  • ½ tsp freshly cracked black pepper

Method

  1. Combine all the marinade ingredients in a large bowl.
  2. Add the diced wild venison and coat thoroughly.
  3. Cover and refrigerate for 2–4 hours. Avoid marinating for much longer, as the citrus can begin to affect the texture of this lean meat.
  4. Thread the venison onto skewers, alternating with the onion, peppers and mushrooms.
  5. Preheat your BBQ to a high heat.
  6. Cook the skewers for 8–10 minutes, turning every couple of minutes to colour evenly. Venison is best served medium-rare to medium to retain its tenderness.
  7. Remove from the BBQ and rest for 5 minutes before serving.

Fresh Herb Yoghurt Sauce

Ingredients

  • 150g Greek yoghurt
  • 1 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 1 tsp chopped chives
  • Juice of ½ lemon
  • 1 tsp honey
  • 1 tbsp extra virgin olive oil
  • Pinch of sea salt
  • Freshly cracked black pepper

Mix together all the ingredients and chill until ready to serve.


Serve With

  • Warm flatbreads or crusty sourdough
  • Grilled new potatoes
  • Charred asparagus or tenderstem broccoli
  • Mixed leaf salad with pickled red onion
  • A spoonful of the fresh herb yoghurt sauce
