We’ve recently welcomed new machinery into our butchery that allows us to pack your meat more efficiently while maintaining the impeccable quality you expect from us. Although the tools have advanced, the butchery itself remains completely artisanal — every product is still made, shaped, trimmed, rolled, and tied by hand by our master butchers.

What the new machinery does offer is:
