The trick to cooking a pheasant is to do so at a much lower heat, but for a longer amount of time. Slow cooking this way will prevent the pheasant from drying out. You could also coat it in butter or olive oil to keep it moist. Failing that, a good glug of cider or wine and a broth or stock will make for a mouth-watering meal.
