The cut

Cut from between the flank and brisket on the lower side of the beef carcass, beef short ribs are a real treat that you may not have experienced before. Meatier and heartier than their porky counterparts, The Organic Butchery's short ribs are perfectly layered with thick marbled meat and soft melting fat. The classic cut rib is shorter and stockier than the alternative Jacob's ladder cut. If you need some inspiration for a recipe why not try our rich short rib ragu with tagliatelle. 

All our grass-fed beef is matured on the bone for 28 days. For a slow-cooking cut like beef short ribs, this hanging time is crucial. It allows the meat to dry out slightly, relaxing and tenderising. This means the grain is open and will absorb flavour while cooking and flake from the bone when it's done.

Storage Information

Once your order arrives, unpack your fresh products and place them in the fridge at 0–5°C as soon as possible.

The minimum shelf life for each fresh product is shown in the description and includes your delivery day. Every pack is also labelled with its own use-by date. Please enjoy or freeze your fresh meat before this date.

If you don't plan to use your fresh meat before the use-by date, we recommend freezing it as soon as possible after delivery to preserve its quality. Defrost thoroughly in the refrigerator before cooking and do not refreeze once fully thawed.

I knew this was a slow roast cut and put it in an oven dish together with vegetablesand some stock. After 2.5 hrs , it was done to perfection: THE BONE EASY TO REMOVE AND THE MEAT TENDER AND SUCCULANT.
