Organic Lamb Heart

Organic lamb heart is, as far as we're concerned, one of the very best bits of the lamb carcass. But it's what could kindly be called a forgotten cut. You'll never see it in the supermarket and rarely on the butcher's counter so it's not surprising people aren't sure what to do with it. With an intense but delicate flavour and soft, tender texture, lamb heart is an incredibly thrifty and versatile cut that comes conveniently portioned: one heart serves one person. At The Organic Butchery, we believe in using the most sustainable methods possible whilst organically rearing our animals; we aim to use as much of the carcass as possible, to reduce wastage. The breeds we've chosen make the most of our abundant West Country pasture, thriving on a diet of grass as well as clover and herbs.
