Yogurt Marinated Organic Pork Ribeye Steaks

Another BBQ in the sunshine today - honestly, this weather is just the best for outdoor cooking.
Pork ribeye has such a great balance of juicy meat and beautifully flavourful fat, which crisps up brilliantly over the flames.
This marinade is super simple but works so well. The yogurt and lemon help tenderise the pork while adding loads of flavour.
So here goes!

Serves 4
Ingredients
- 3 heaped tbsp Greek yogurt
- 2 x 340g Organic Pork Rib Eye Steaks
- 2 tbsp olive oil
- 4 cloves garlic, minced
- Juice of 1/2 lemon
- 1 tsp smoked paprika
- 1 tbsp dried oregano
- Salt & black pepper
Method
Mix together the Greek yogurt, olive oil, garlic, lemon juice, smoked paprika, oregano, salt, and pepper.
Smother all over the pork ribeye steaks, cover, and leave in the fridge for at least 2 hours - or overnight if you have time.
When ready to cook, fire up the BBQ.
Shake most of the marinade off the pork and grill on each side until cooked through and nicely charred.
The meat becomes incredibly tender thanks to the yogurt and lemon, while still getting those delicious smoky BBQ edges.
I served mine with a wedge of lemon, smashed garlic roasted Jerseys, and a kale and seed salad.
Perfect summer BBQ food.
