Sticky Asian Pork Ribs with Salt & Pepper Fries & Smacked Cucumber Salad

Sweet, sticky and incredibly moreish, these Organic Pork Ribs are cooked low and slow until the meat is beautifully tender and falling off the bone. Finished with a rich Asian-inspired glaze and served alongside crispy salt & pepper fries and a refreshing smacked cucumber salad, this is the ultimate weekend feast.

Ingredients
For the Sticky Pork Ribs
- 4 racks Organic Pork Ribs
- 2 tbsp brown sugar
- 1 tsp salt
- 1 tsp chipotle chilli powder or flakes
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp ground cumin
Sticky Glaze
- 3 tbsp brown sugar
- 4 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp fresh grated ginger
- 4 garlic cloves, minced
- 2 tbsp rice wine vinegar
- 1 tbsp sesame oil
- ½ tsp dried chilli flakes
Salt & Pepper Fries
- Chips or fries of your choice
- 1 red pepper, chopped into chunks
- 4 spring onions, sliced
- 1–2 red chillies, sliced
- Salt & pepper seasoning
- A little oil
Smacked Cucumber Salad
- 6–8 small cucumbers
- Splash of light soy sauce
- Splash of rice wine vinegar
- Splash of sesame oil
- Drizzle of honey
- 1 garlic clove, minced
- Dried chilli flakes (or chilli & onion seasoning)
- Sesame seeds
To Finish
- Chopped spring onions
- Sesame seeds

Method
Cook the Ribs
Mix together the brown sugar, salt, chipotle chilli, smoked paprika, onion powder, garlic powder and cumin. Rub generously over both sides of the pork ribs.
Place each rack meat-side up onto greaseproof paper, wrap tightly, then wrap again in foil. Transfer to a baking tray and cook in a preheated oven at 150°C for 2–2½ hours, until the meat is tender and falling away from the bone.
Make the Sticky Glaze
Meanwhile, combine the brown sugar, soy sauce, honey, ginger, garlic, rice wine vinegar, sesame oil and chilli flakes in a small saucepan. Simmer gently until slightly reduced and glossy.
Unwrap the cooked ribs, brush generously with the glaze and return to the oven at 180°C for 15 minutes until sticky and caramelised.
Finish with any remaining glaze, chopped spring onions and sesame seeds.
Salt & Pepper Fries
Cook the fries according to the packet instructions.
Heat a little oil in a wok and stir-fry the red pepper, spring onions and chilli for a few minutes. Toss through the cooked fries and sprinkle generously with your favourite salt & pepper seasoning.
Smacked Cucumber Salad
Lightly smash the cucumbers with the handle of a knife before cutting into chunky pieces.
Dress with the soy sauce, rice wine vinegar, sesame oil, honey, garlic, chilli flakes and sesame seeds, then toss well to combine.
To Serve
Pile the sticky pork ribs onto a platter alongside the salt & pepper fries and refreshing cucumber salad for a restaurant-worthy meal that's perfect for sharing.
