Shredded Chicken Greek Salad

A vibrant, protein-packed salad that brings freshness and crunch to your table. Made with tender organic shredded chicken and a creamy herb dressing, it’s a simple yet elevated twist on a classic Greek-inspired bowl.

Ingredients
For the Salad

2 cups cooked shredded chicken – from The Organic Butchery

½ cucumber, cut into thin matchsticks
-
4 radishes, cut into thin matchsticks
-
3 celery ribs, finely diced
-
½ large avocado, diced small
-
1 dill pickle, finely diced
-
1 tsp fresh dill, finely chopped
-
1 tsp fresh parsley, finely chopped
-
⅓ cup walnuts, roasted and chopped
-
1 tbsp extra virgin olive oil (EVOO)
For the Dressing
-
⅓ cup Greek yoghurt (lactose-free if needed)
-
1 garlic clove, finely minced
-
1 tsp fresh dill, finely chopped
-
1 tsp fresh mint, finely chopped
-
½ tsp extra virgin olive oil
-
½ tsp lemon juice
-
¼ tsp Dijon mustard
-
Salt and pepper to taste
Method

Prepare the Dressing
In a small bowl, whisk together the yoghurt, garlic, herbs, olive oil, lemon juice, Dijon mustard, salt and pepper. Mix until smooth and well combined. -
Assemble the Salad
In a large bowl, combine the cucumber, radishes, celery, avocado, dill pickle, fresh herbs, walnuts and shredded chicken. -
Dress and Finish
Pour the yoghurt dressing over the salad and gently toss to coat everything evenly. Drizzle with 1 tablespoon of olive oil just before serving for added richness.
Optional: For a more composed presentation, layer the chicken on top instead of mixing it in.
