Ingredients
For the Bowl
-
2 organic salmon fillets – from The Organic Butchery
-
1 ripe avocado, thinly sliced
-
⅓ cucumber, finely sliced
-
1 courgette, peeled into ribbons
-
2 celery stalks, thinly sliced
-
A handful of mangetout or sugar snap peas, thinly sliced
-
1 tbsp capers, chopped
-
2 tbsp fresh coriander, finely chopped
-
1 tsp toasted sesame seeds
For the Dressing
-
3 tbsp extra virgin olive oil
-
1 tsp lime juice
-
2 tsp fresh ginger, grated
-
⅓ tsp Dijon mustard
-
Salt & pepper to taste
-
(Optional: A pinch of garlic powder for added depth)
Method
-
Prepare the Salmon
Season the salmon fillets with sea salt, freshly ground black pepper, and a generous drizzle of olive oil. -
Cook in the Air Fryer
Preheat your air fryer to 190°C. Lightly spray the basket with olive oil and place the salmon fillets inside, skin-side down.
Cook for 7–9 minutes, depending on thickness, until tender and flaky. Remove and break into large flakes – crispy skin included if you enjoy it! -
Make the Dressing
In a small bowl or jar, combine the olive oil, lime juice, grated ginger, Dijon mustard, salt and pepper. Shake or whisk well to emulsify. -
Assemble the Bowl
In a large mixing bowl, combine the avocado, cucumber, courgette ribbons, celery, mangetout, capers and coriander. Add the flaked salmon and drizzle over your desired amount of dressing. -
Garnish & Serve
Toss everything gently to combine. Finish with a sprinkle of toasted sesame seeds for crunch and flavour.
Serving Tip
Best enjoyed fresh, but you can prep the veg and dressing ahead for a quick midweek lunch or light dinner.
