Organic Salmon & Creamy Spinach Stew

Ingredients (Serves 4)

4 organic salmon fillets, skin off and cut into large chunks

1 tbsp olive oil

1 knob of butter

1 onion, finely chopped

2 cloves garlic, minced

1 leek, sliced

2 medium potatoes, peeled and diced

500ml good-quality chicken or vegetable stock

150ml double cream

2 large handfuls fresh spinach

1 tsp Dijon mustard

Juice of half a lemon

Small bunch fresh dill or parsley, chopped

Salt and freshly ground black pepper
Method

Heat the olive oil and butter in a large pan over a gentle heat. Add the onion and leek, cooking slowly for 8–10 minutes until soft and translucent. Stir in the garlic and cook for a further minute.

Add the diced potatoes and pour in the stock. Bring to a gentle simmer and cook for 10–12 minutes, or until the potatoes are tender.

Stir in the cream and Dijon mustard, allowing the stew to gently bubble for a few minutes to thicken slightly.

Add the salmon chunks and cook for 4–5 minutes, or until just cooked through and tender.

Fold in the fresh spinach and allow it to wilt into the stew. Finish with a squeeze of lemon juice and a generous sprinkle of fresh herbs.

Season to taste with salt and pepper, and serve warm with crusty bread.
