Korean Gochujang Pork & Vegetable Stir-Fry Noodles

Looking for a quick, flavour-packed midweek meal? These Korean Gochujang Pork & Vegetable Stir-Fry Noodles are a fantastic way to transform our Organic Pork Mince into something warming, vibrant, and incredibly satisfying.
The combination of rich pork, crunchy vegetables, and a sweet-spicy gochujang sauce creates a dish that's perfect for busy evenings when you want maximum flavour with minimal fuss.

Ingredients
- 300g Organic Pork Mince
- 1 tbsp grated ginger
- 2 cloves garlic, chopped
- 1 red pepper, finely sliced
- 1 green pepper, finely sliced
- 1 carrot, shredded
- ¼ red cabbage, shredded
- 1 red onion, sliced
- 1 red chilli, sliced
- 2 spring onions, sliced (green parts separated)
- 1 tbsp gochujang paste
- 1 tbsp dark soy sauce
- 1 tsp honey
- 1 tsp sesame oil
- Medium egg noodles, softened according to packet instructions
Method
- Heat a wok over a high heat and brown the Organic Pork Mince until beautifully coloured. Add the grated ginger and chopped garlic and cook for a further minute until fragrant. Remove from the wok and set aside.
- Add a small splash of oil to the wok and add all the prepared vegetables. Cook on a high heat for 3–4 minutes, keeping the vegetables crisp and colourful.
- In a small bowl, mix together the gochujang paste, dark soy sauce, honey, and sesame oil.
- Return the pork to the wok with the vegetables and stir through the sauce until everything is evenly coated.
- Finish with the green parts of the spring onions and toss through the softened egg noodles.
Serve immediately and enjoy a quick, comforting bowl of sweet, savoury, and gently spiced Korean-inspired noodles.
