DIY Bonfire Night Organic Lamb Skewers with Nutty-Sweet Glaze

Ingredients (Serves 2–3)

400g organic diced lamb

Wooden skewers (soaked in water for 15 minutes to prevent burning)

Nutty-Sweet Glaze:

2 tbsp honey or maple syrup

1 tbsp tahini (or smooth peanut butter)

1 tbsp olive oil
-
1 tsp soy sauce
-
1 clove garlic, minced

1 tsp fresh grated ginger

1 tbsp chopped toasted nuts (almonds, pistachios, or cashews)

Optional: ½ tsp smoked paprika for warmth and colour

Fresh herbs to garnish: parsley, coriander, or mint

Sea salt & black pepper to taste
Method

Prepare the lamb:
Pat the diced lamb dry with a paper towel. Thread evenly onto the wooden skewers. Season lightly with sea salt and black pepper. -
Make the glaze:
In a small bowl, whisk together honey, tahini, olive oil, soy sauce, garlic, ginger, and smoked paprika until smooth. Stir in half of the chopped nuts. -
Cook the skewers:

Oven method: Preheat the oven to 200°C fan (220°C conventional). Place skewers on a lined baking tray and brush generously with the glaze. Roast for 15–20 minutes, turning halfway, until lamb is cooked to your liking.

BBQ or grill method: Preheat to medium heat. Cook the skewers for 10–12 minutes, turning occasionally and brushing with glaze, until slightly caramelised and cooked through.

Finish and serve:
Remove skewers from heat and brush with any remaining glaze. Sprinkle the remaining chopped nuts and fresh herbs over the top for a beautiful, crunchy, aromatic finish. Serve with warm flatbreads, couscous, or a simple salad for a full Bonfire Night feast.
