Lamb Shanks with Port & Redcurrant Recipe

A rich, comforting festive dish made with Organic Butchery Lamb Shanks

Slow-cooked lamb shanks are the ultimate winter warmer—deeply savoury, subtly sweet, and wonderfully luxurious. When braised with red wine, port, and redcurrant jelly, our organic lamb shanks turn melt-in-the-mouth tender. Once everything is prepped, the oven does all the hard work, making this a perfect recipe for effortless festive entertaining.

Ingredients

  • 2 Organic Lamb Shanks from The Organic Butchery

  • 2 sticks celery, finely diced

  • 2 carrots, finely diced

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 2 tbsp plain flour

  • 3 tbsp tomato purée

  • 350ml red wine

  • 200ml port

  • 400ml beef stock (plus extra if needed)

  • 2 bay leaves

  • A few sprigs of rosemary and thyme

  • 2 heaped tbsp redcurrant jelly

  • Olive oil

  • Sea salt & freshly cracked black pepper


Method

1. Sear the Lamb

Season the lamb shanks generously with salt and pepper.
Heat a little olive oil in a large, heavy-based casserole dish and sear the shanks on all sides until browned. Set aside.

2. Cook the Vegetables

In the same pan, add the celery, carrots, and onion.
Sauté gently for 8–10 minutes until softened.
Stir in the garlic and cook for another 1–2 minutes.

3. Build the Base

Sprinkle the flour over the vegetables and cook for a further 2 minutes.
Add the tomato purée, red wine, port, and beef stock.
Stir in the bay leaves and herbs, then return the lamb shanks to the pan.
Bring everything up to a gentle simmer.

4. Slow Cook

Preheat the oven to 160°C (fan).
Transfer the casserole to the oven and cook for 2.5–3 hours.

After 1 hour, check the lamb:

  • Turn the shanks so they stay submerged in the liquid.

  • Stir in the redcurrant jelly.

  • Add a splash more stock if needed.

Continue to cook, checking every hour until the lamb is fork-tender and falling off the bone.

5. Finish & Serve

Taste and season the sauce to your liking.
Serve the lamb shanks with creamy mashed potatoes and steamed green vegetables for the perfect comfort dish.
