What to Expect from Our Organic Lamb Mince Meat

  • Typically 20% Fat Content: The ideal ratio for rendering down during cooking to keep the meat succulent and moist.
  • Prime Cuts Only: We use lean lamb from the shoulder and leg, ensuring a consistent texture without gnarly bits.
  • 100% Certified Organic: Sourced from farms that adhere to the highest welfare standards, your purchase is free from routine antibiotics and GMOs.
  • Grass-Fed Flavour: Our sheep graze on diverse pastures, resulting in meat that is rich in Omega-3s and distinctive in taste.
  • Finely Ground: Prepared for the perfect flavour, our savory lamb mince binds well for meatballs and koftas while breaking down beautifully for sauces.
  • Award-Winning Pedigree: Part of a collection recognised by Taste of the West and the Great Taste Awards.

The Perfect Balance of Lean and Fat

Many home cooks underestimate the importance of fat content in lamb mince. Our butchery team specifically targets a 20% fat ratio, which is widely considered the "sweet spot" for culinary applications. When you cook with our organic mince, this fat renders down slowly, basting the meat from the inside out. This ensures that your Shepherd’s Pie remains juicy, and your burgers hold their shape without becoming dense.

Because we do not bulk our mince out with inferior trimmings, you are left with a pure, unadulterated product. The flavour is robust enough to stand up to heavy spices in Moroccan tagines or Indian keema curries, yet delicate enough to shine in a simple ragu. It is this versatility that makes it a staple in the kitchens of our discerning customers.
If you enjoy deeper, more robust flavours, you might also like our Mutton Mince for an alternative take on classic recipes.

Sourced from Trusted West Country Farms

The quality of our organic lamb mince begins long before it reaches the butchery block. We work closely with a select group of dedicated farmers who share our passion for sustainable, ethical agriculture.

For example, we are proud to source from the Malseed family at Frenchbeer Farm. For more than 30 years, they have tended their 1,200-acre hill farm near Chagford. Here, they raise hardy sheep that thrive on the rugged landscape.

Operating under full organic certification, Frenchbeer Farm ensures every animal is reared to the highest welfare standards. The sheep have the freedom to roam and grow at a natural pace. This slow-growing process allows the meat to develop a deep, complex flavour profile that you won’t find in non-organic cuts.

Expert Craftsmanship: The Heart of Our Butchery

Once the meat reaches us, it is handled with the utmost respect. As we often say, our skilled butchers are the heart and soul of our operation. They have the expertise to prepare every cut with care, precision, and respect.

We believe good, honest meat begins with good, honest butchery. With our carefully prepared organic beef steak mince and our selection of organic pork mince, every product reflects the same standards of care and precision, including our lamb mince.
Making high-quality mince also depends on selection. Our team hand-selects the cuts to ensure the blend of lean meat and fat is consistent in every batch. We take pride in traditional butchery and good, honest meat. This commitment is why we have earned recognition from prestigious accolades such as the Best of Organic Market (BOOM) awards.

When you buy from us, you are supporting a supply chain that values the animal, the farmer, and the finished product equally.
