When it comes to late summer dining or a midweek supper that brings excitement to the table, these Thai-Style Organic Pork Burgers are a true standout. Bursting with fragrant aromatics and subtle heat, they balance richness from high-quality pork mince with the freshness of herbs and spices. Made with our 100% organic, free-range pork, these burgers are succulent, deeply flavoured, and effortlessly versatile — equally at home on the barbecue, griddle, or pan. Served with steamed rice, a cooling cucumber salad, and a touch of Thai sweet chilli sauce, they deliver a vibrant twist on the classic burger.


Ingredients (Serves 4)

  • 400g Organic Pork Mince (slightly higher fat content for juiciness, from The Organic Butchery)

  • 4 cloves garlic, minced

  • 2 large spring onions, finely sliced

  • Small bunch fresh coriander, finely chopped

  • 2 tbsp Thai red curry paste

  • 1 stalk lemongrass, finely chopped

To serve:

  • Steamed rice

  • Cucumber salad (lightly dressed with rice vinegar and sesame oil)

  • Thai sweet chilli sauce


Method

  1. Prepare the mixture
    In a large mixing bowl, combine the organic pork mince with garlic, spring onions, coriander, Thai red curry paste, and lemongrass. Mix thoroughly until evenly combined, ensuring the flavours are well incorporated.

  2. Shape the patties
    Divide the mixture into four equal portions and form into burger patties, pressing them gently but firmly to hold their shape. Place the patties on a plate or tray, cover, and refrigerate for 1–2 hours. This step allows the flavours to deepen and helps the burgers hold together during cooking.

  3. Cook the burgers
    Preheat your barbecue, griddle, or frying pan. Cook the burgers over medium heat for approximately 5–6 minutes on each side, or until fully cooked through with no pink in the centre. The outside should be beautifully golden and lightly charred.

  4. Serve and enjoy
    Pair the burgers with steamed rice, a refreshing cucumber salad, and a drizzle of Thai sweet chilli sauce. For an added touch, garnish with fresh coriander leaves or sliced red chilli.
