Organic Pork & Apple Meatballs with Cider Cream Sauce

Ingredients (Serves 4)

500g Organic Pork Mince (from The Organic Butchery)

1 apple, peeled and grated

1 small onion, finely chopped

2 cloves garlic, minced

1 egg, beaten

50g breadcrumbs (preferably sourdough)

1 tsp fresh thyme leaves

200ml organic dry cider
-
150ml double cream
-
Olive oil, for frying

Salt & pepper, to season
Method

In a bowl, combine pork mince, apple, onion, garlic, egg, breadcrumbs, thyme, salt, and pepper. Mix until just combined.

Shape into small meatballs and refrigerate for 30 minutes to firm.

Heat oil in a large frying pan and brown the meatballs on all sides. Remove and set aside.

Deglaze the pan with cider, reduce slightly, then stir in cream. Return meatballs and simmer gently for 10 minutes until cooked through.

Serve with buttery mash or seasonal greens.
