Roast Organic Pork Loin with Crackling, Apple & Onion

There’s nothing quite like a wholesome Sunday roast — comforting, flavourful, and perfect for gathering loved ones around the table. This recipe features our Organic Rolled Pork Loin with perfectly crisp crackling, sweet roasted apples and onions, and a rich gravy made from the pan juices. Simple, traditional, and deeply satisfying.

Ingredients

1.2kg rolled Organic Pork Loin from The Organic Butchery

3 eating apples, chunky sliced

1 large onion, cut into wedges

Olive oil
-
Sea salt
-
1 glass white wine
-
2 tbsp plain flour
-
1 litre boiling water
-
2 chicken stock pots or cubes
-
Freshly ground black pepper
Method
1. Preheat the oven
Preheat your oven to 220°C fan (or as hot as it will go).
2. Prepare the pork
Pat the pork skin dry with kitchen paper — this step is key to perfect crackling. Drizzle lightly with olive oil and sprinkle generously with sea salt. Place the pork loin in a roasting tin, skin-side up.
3. Create the crackling
Roast at high heat for 20–30 minutes, until the crackling is golden, bubbling, and crisp.
4. Add the apples and onions
Once the crackling is crisp, reduce the oven temperature to 180°C fan. Add the sliced apples and onion wedges around the pork. Return to the oven for another 30 minutes.
5. Rest the meat
Remove the pork from the oven, cover loosely with foil, and allow it to rest for at least 15 minutes. This helps the meat stay juicy and tender.
Meanwhile, return the apples and onions to the oven for 10–15 minutes to finish roasting and caramelising.
6. Make the gravy
Place the roasting tin (with all those delicious flavours) over a medium heat. Add the white wine and scrape up any golden bits from the bottom of the pan. Stir in the flour and cook for a couple of minutes to form a roux.
Gradually add the boiling water and stock pots, stirring until smooth. Pour in the resting juices from the pork for extra richness. Simmer for 5 minutes until thickened and glossy.
7. Serve and enjoy
Slice the pork and serve with the roasted apples and onions, crispy roast potatoes, honey-roasted parsnips, carrots, green vegetables, and plenty of that delicious homemade gravy.
