Healthy Turkey & Herb Patties

Ingredients (serves 2–3)

1 small onion, finely chopped

1 garlic clove, minced

1 tsp fresh thyme, chopped

1 tsp fresh parsley, chopped

1 egg, lightly beaten

2 tbsp breadcrumbs (or oat flour for gluten-free)

Salt and black pepper, to taste

1 tbsp olive oil, for frying
Optional for serving:

Salad leaves or roasted vegetables

Wholemeal buns or wraps

Yogurt and herb sauce
Method

Prepare the mixture:
In a bowl, combine the turkey mince, onion, garlic, thyme, parsley, egg, breadcrumbs, salt, and pepper. Mix gently until all ingredients are well combined. Avoid overworking the meat to keep the patties tender. -
Form the patties:
Divide the mixture into 2–3 even portions and shape into round patties, about 1.5–2cm thick. -
Cook the patties:
Heat olive oil in a frying pan over medium heat. Cook the patties for 4–5 minutes on each side, or until golden brown and cooked through. Turkey mince should reach an internal temperature of 75°C (165°F). -
Serve and enjoy:
Serve the patties hot with salad, roasted vegetables, or in wholemeal buns for a healthier twist on classic burgers. Add a dollop of yogurt-herb sauce for extra flavour.
