Lamb Barnsley Chops with a Fresh Herby Sauce

Few dishes capture the spirit of seasonal British cooking quite like a perfectly cooked organic Barnsley lamb chop. Beautifully meaty and rich in flavour, this classic double chop — cut across the loin — makes a wonderfully satisfying centrepiece.
This recipe pairs our Organic Butchery Barnsley Chops with a zesty, garden-fresh herb sauce and simple sides of crispy roast potatoes, pea purée, and tenderstem broccoli. It’s a celebration of high-quality organic lamb and fresh, honest ingredients — the kind of meal that feels indulgent yet wholesome.
🥩 Ingredients (Serves 2)
For the Lamb:

2 x Organic Barnsley Lamb Chops from The Organic Butchery

2 tbsp olive oil
-
Zest of 1 lemon
-
1 sprig fresh rosemary, finely chopped
-
1 garlic clove, minced
-
Freshly ground black pepper (salt just before cooking)
For the Herby Sauce:
-
3 tbsp olive oil
-
Juice of ½ lemon
-
1 garlic clove
-
Small bunch each of fresh mint, parsley, and chives

Sea salt & freshly ground black pepper, to taste
🔥 Method

Marinate the Lamb
In a small bowl, combine the olive oil, lemon zest, rosemary, garlic, and black pepper. Rub the mixture all over the Barnsley chops, ensuring they’re evenly coated.
Cover and leave to marinate for about 1 hour at room temperature (or longer in the fridge if preparing ahead). -
Sear & Roast
Preheat the oven to 180°C (fan 160°C).
Heat a frying pan until hot, season the chops with a pinch of salt, and brown on both sides — don’t forget to render the fat by holding them upright for a few seconds in the pan.
Transfer to an ovenproof dish and cook for 8–10 minutes for medium, or to your liking. Rest the chops for a few minutes before serving. -
Make the Herby Sauce
While the lamb rests, place all sauce ingredients in a blender — olive oil, lemon juice, garlic, mint, parsley, and chives — with a pinch of salt and pepper.
Blitz until smooth and vibrant green. Taste and adjust seasoning as needed. -
Serve & Enjoy
Spoon the herby sauce generously over the warm Barnsley chops. Serve alongside crispy roast potatoes, a smooth pea purée, and tenderstem broccoli for a complete meal bursting with freshness and balance.
