Organic Beef Bavette Braciole

"This dish is something my husband’s Nonna used to make — thin slices of beef, stuffed and then slowly cooked in a rich, delicious tomato sauce until meltingly tender."
For this version, The Organic Butchery Organic Beef Bavette, which is a perfect cut for this dish thanks to its flavour and texture when slow cooked.
A true Italian comfort classic, made properly.
Serves 4–6
Braciole Ingredients
- 700g The Organic Butchery Organic Beef Bavette Steak
- 100g grated Parmesan
- 100g fresh breadcrumbs
- Small bunch fresh parsley, finely chopped
- 4 cloves minced garlic
- 2–3 tbsp extra virgin olive oil
- Small pack pine nuts
- Salt & black pepper

Sauce Ingredients
- 1 medium onion, finely chopped
- 2 tins finely chopped tomatoes
- 2 tbsp extra virgin olive oil
- ½ tube tomato purée
- Salt & black pepper

Method
Place the beef between parchment paper and bash out with a rolling pin until around ½cm thickness.
Next, mix all the filling ingredients together.
Place the mixture onto the top of each piece of beef, leaving a small border around the edge.
Roll up the beef, tucking in the edges as you go. Secure the ends with cocktail sticks and use cooking twine to wrap around the middle, making sure everything is held together.
Drizzle a little extra virgin olive oil into a large pan with a lid and brown all sides of your beef rolls.
Remove from the pan.
Now add a little more olive oil and gently sauté the onion.
Then add the tinned tomatoes, tomato purée, and 1½ tins of water.
Season with salt and black pepper.
Bring up to the boil, reduce the heat, and add the beef rolls back into the sauce.
Cover and gently cook for 1½–2 hours, turning the meat every 30 minutes, until beautifully tender.

To Serve
Remove all the twine and cocktail sticks.
Cut the beef into slices and serve with your pasta of choice.
Manfredine pasta works beautifully, but any pasta will do.
Pour over plenty of the rich tomato sauce and enjoy.
