Homemade Organic Chicken Bone Broth

There’s something timeless about a pot of organic chicken bone broth simmering gently on the stove. At The Organic Butchery, we believe that some of the simplest things are the most rewarding — and a proper broth made from organic chicken carcasses is one of them.

This nourishing recipe transforms humble bones into a rich, golden stock that’s brimming with natural collagen, minerals, and flavour. Whether you sip it as a warming tonic or use it as the base for soups, risottos, and sauces, this broth celebrates the essence of nose-to-tail eating — nothing wasted, everything valued.

Made using organic, high-welfare chicken bones from free-range birds, this broth is as good for the planet as it is for you. It’s a perfect way to make use of every part of the animal, keeping flavour high and waste low — one of the cornerstones of our butchery philosophy.


🍗 Ingredients (Makes around 2 litres)

  • 1kg (2 x carcasses) Organic Chicken Stock Bones

  • 2 carrots, roughly chopped

  • 2 celery sticks, roughly chopped

  • 1 onion, quartered (skin on for a golden colour)

  • 3 garlic cloves, crushed

  • 2 bay leaves

  • A few sprigs of fresh thyme or parsley stalks

  • 1 tbsp apple cider vinegar (helps extract nutrients from the bones)

  • Sea salt and black peppercorns to taste

  • Around 3 litres cold filtered water


🔥 Method

  1. Prepare the bones – If you have time, roast the chicken bones in a hot oven (200°C / 180°C fan) for around 30 minutes until golden brown. This adds a deeper, richer flavour to your broth.

  2. Combine ingredients – Place the bones, vegetables, herbs, and vinegar in a large stockpot or slow cooker. Pour over cold water until everything is well covered.

  3. Simmer slowly – Bring to a gentle boil, then reduce to the lowest simmer. Skim off any foam that rises to the top during the first hour.

  4. Cook low and slow – Leave to gently bubble for 8–12 hours, topping up with water if needed. The longer you cook it, the richer the broth.

  5. Strain and season – Carefully strain through a fine sieve or muslin cloth. Discard the solids and season to taste with salt and pepper.

  6. Cool and store – Once cool, refrigerate for up to 5 days, or freeze in portions for up to 3 months.
