Spiced Apple Pork Joint – A New Christmas Classic from The Organic Butchery

For those who want something a little different on the Christmas table this year, our Spiced Apple Pork Joint is the perfect festive centrepiece. Crafted from the finest outdoor-bred organic pork and paired with our own bespoke spiced apple glaze, this joint marries traditional comfort with a touch of seasonal luxury.

Available in two sizes – 1.2kg (ideal for smaller gatherings of 3–4 people) and 2.4kg (perfect for larger family feasts of 6–8 people) – this joint gives you flexibility without compromising on indulgence.

The natural sweetness of the apple glaze enhances the rich flavour of the pork, creating a dish that is indulgent, fragrant, and perfectly suited to Christmas dining. Ingredients

Optional extras:

Method

  1. Preparation
    Take the pork joint out of the fridge an hour before cooking to reach room temperature. Preheat your oven to 220°C (200°C fan) / Gas 7.

  2. Season and sear
    Rub the joint with olive oil, garlic, salt, and pepper. Place in a heavy roasting tin with the onion quarters around it. Roast at high heat for 20 minutes to create a golden crust.

  3. Slow roast
    Reduce the oven to 180°C (160°C fan) / Gas 4. Add a splash of cider or apple juice to the tin to keep the joint moist. Roast for 25 minutes per 500g, plus 20 minutes extra.

    • 1.2kg joint: approx. 1 hour 20 minutes

    • 2.4kg joint: approx. 2 hours 20 minutes

  4. Glaze generously
    In the final 30 minutes of cooking, brush the pork with our Spiced Apple Glaze, repeating every 10 minutes to build up a glossy, caramelised finish.

  5. Rest and serve
    Remove the joint from the oven, cover loosely with foil, and rest for at least 20 minutes before carving.
