    Use a meat thermometer for precision:

    • Rare: 50°C

    • Medium rare: 55°C

    • Medium: 60°C

  4. Rest with patience
    Once roasted to your preference, remove the joint from the oven, cover loosely with foil, and rest for at least 30 minutes. This step is essential – it allows the juices to redistribute, leaving each slice tender and moist.
