Remove the joint from the fridge 1–2 hours before cooking, allowing it to reach room temperature. Preheat your oven to 220°C (200°C fan) / Gas 7. -

Place the joint on a rack in a heavy roasting tin. Roast at high heat (220°C) for 20 minutes to develop a golden crust, then reduce the oven to 180°C (160°C fan) / Gas 4 and continue roasting:-
