Honey Glazed Carrots with Chestnuts

These Honey Glazed Carrots with Chestnuts are a simple yet elegant side dish that bring warmth, sweetness and festive flair to the table. Tender baby carrots are gently caramelised in butter and honey, then tossed with golden chestnuts and fragrant thyme — the perfect balance of sweet and savoury. Ingredients (Serves 4–6)

700g baby or Chantenay carrots, trimmed and scrubbed

2 tbsp butter

2 tbsp honey

100g cooked chestnuts, halved

1 tbsp fresh thyme leaves

Sea salt and freshly ground black pepper, to season
Method

Prepare the carrots:
If using baby carrots, leave them whole for a rustic look. For larger carrots, slice them lengthways for even cooking. -
Steam or boil:
Place the carrots in a large pan of salted water and cook for 6–8 minutes, until just tender but still with a little bite. Drain well. -
Glaze the carrots:
In a large frying pan, melt the butter over medium heat. Add the honey and stir until combined. -
Add the carrots and chestnuts:
Toss the cooked carrots into the pan, coating them in the honey-butter glaze. Add the halved chestnuts and thyme, then season generously with sea salt and black pepper. -
Caramelise:
Cook for a further 5–7 minutes, stirring occasionally, until the carrots are glossy and lightly caramelised and the chestnuts are warmed through. -
Serve:
Transfer to a serving dish and scatter with a few extra thyme leaves for a fragrant finish. Serve warm alongside your favourite organic roast meat — they’re especially delicious with roast pork, chicken or beef.
