Crispy Hasselback Roast Potatoes with Garlic & Rosemary
The perfect side dish for your Christmas feast
There’s something undeniably special about the humble roast potato — but at Christmas, they deserve an upgrade. Enter the Hasselback potato: beautifully crisp on the outside, tender in the middle, and infused with the rich, festive flavours of garlic, rosemary and golden butter.

🥔 Ingredients (Serves 4–6)

1.5kg organic potatoes (Maris Piper or King Edward work beautifully)

3 tbsp organic olive oil

50g organic butter, melted

4 cloves organic garlic, thinly sliced

2 sprigs fresh organic rosemary, finely chopped (plus extra for garnish)

Sea salt & freshly cracked black pepper
🔪 Method
1. Preheat the oven
Set your oven to 200°C (180°C fan) / Gas 6. Choose a large roasting tray that allows your potatoes to sit in a single layer for even crisping.
2. Prepare your potatoes
Wash and dry the potatoes, leaving the skins on for extra flavour and crunch. Place each potato on a wooden spoon or between two chopsticks, then carefully slice downwards every 2–3mm — the spoon will stop you from cutting all the way through.
3. Season & coat
Arrange the potatoes in your roasting tray. Drizzle over the olive oil and melted butter, making sure to get some into the cuts. Season generously with sea salt and cracked black pepper.
4. Roast to golden perfection
Roast for 40 minutes, then remove from the oven. Use a spoon to baste the potatoes with the hot oil and butter from the tray.
Tuck in the sliced garlic and chopped rosemary between the slits of each potato.
Return to the oven for another 25–30 minutes, or until the potatoes are crisp, golden, and the insides are fluffy.
5. Serve & enjoy
Finish with a sprinkle of sea salt and a few fresh rosemary leaves for aroma. Serve immediately alongside your organic roast meats, from turkey to beef or lamb.
