How to Cook an Organic Beef Wellington (1.4kg)

Our Organic Beef Wellington combines premium beef, mushroom duxelles, and a golden puff pastry crust — perfect for Christmas or any special occasion. Cooking it correctly ensures a tender, juicy centre with a crisp, flaky exterior.


🧑🍳 Preparation

  1. Bring to room temperature
    Remove the Beef Wellington from the fridge 1 hour before cooking.

  2. Preheat the oven
    Fan 180°C / Conventional 200°C / Gas 6.

  3. Prepare the Wellington

    • If it comes with a glaze (egg wash), set a little aside for finishing.

    • Place the Wellington on a lightly oiled or lined baking tray.


🔥 Cooking

  • Roast the 1.4kg Wellington in the preheated oven for 50–60 minutes.

  • Check for doneness using a meat thermometer inserted into the centre of the beef:

    Doneness Internal Temperature
    Rare 50–52°C
    Medium Rare 55–57°C
    Medium 60–63°C
    Well Done 70°C+

Tip: Start checking from 45 minutes for accuracy.


🍯 Glaze Finish

  • Optional: In the last 5–10 minutes, brush with reserved egg wash or glaze to enhance golden colour and shine.

  • Avoid opening the oven too often to maintain heat.


Resting

  • Remove from the oven and rest for 10–15 minutes before carving.

  • Resting ensures the juices redistribute, keeping the beef centre tender and moist.


🔪 Carving

  • Slice carefully with a sharp knife.

  • Cut thick or thin slices depending on your serving style.

  • Each slice should showcase the contrast of pink beef, mushroom duxelles, and golden pastry.
