Homemade Red Cabbage Recipe for Christmas Dinner

1 medium red cabbage (about 1kg), finely shredded

Prepare the vegetables
Remove any tough outer leaves from the cabbage, then quarter and remove the core. Finely shred the cabbage using a sharp knife or mandoline. -
Sauté the aromatics
In a large heavy-based pot, melt the butter over medium heat. Add the onion and cook gently for 5–6 minutes until soft and translucent. -
Add the cabbage and fruit
Stir in the red cabbage and grated apples, coating everything in the butter. -
Season and add flavour
Sprinkle in the brown sugar, add the vinegar, orange juice, and spices. Season with salt and pepper. -
Slow cook for perfection
Cover with a lid and reduce the heat to low. Simmer gently for 1½–2 hours, stirring occasionally, until the cabbage is tender and glossy. If it starts to dry out, add a splash more juice or water. -
Taste and adjust
Before serving, taste and balance the flavours — add more vinegar for tang, or a little extra sugar for sweetness if needed.
