WHAT IS ORGANIC PORK?​

We rear organic pigs that are a cross of traditional, native breeds. Reared outdoors, they have plenty of space to express their natural instincts - they love to wallow, rootle and forage in the grass for bugs. Growing our animals slowly ensures their meat has great flavour and texture, balanced by just the right amount of fat.  

Ingredients

  • 6 x 66g organic pork sausages
  • 500ml organic chicken bone broth
  • 50g butter
  • 2 onions, peeled and thinly sliced
  • 2 garlic cloves, peeled and chopped finely
  • 1tsp chopped fresh sage
  • 225g canned chopped tomatoes
  • 400g borlotti beans
  • 1 small pumpkin, peeled and cut into equal-sized pieces
  • 2tbsp white wine vinegar
  • salt and pepper
  • 2tbsp parsley, to serve

Method

  1. Preheat the oven to 180ºC
  2. Heat half of the butter in a casserole dish over a medium heat and fry the sausages for approximately 5 minutes (or until golden brown)
  3. Add in the remaining butter and onions and fry for a further 3-4 minutes or until the onions have softened. Add in your garlic and sage, stirring well cook this for a further 3-4 minutes
  4. Add in your pumpkin and stir everything together until completely combined. Put on a higher heat and add in the white wine vinegar - cook until most of the liquid as evaporated
  5. Pop in the borlotti beans, chopped tomatoes and stock. Season as much or as little as you like with salt and pepper. Bring the mixture to the boil
  6. Transfer the casserole dish to the oven for at least one hour, or until the sausages have completely cooked through
  7. Sprinkle over some parsley and serve

Frequently asked questions

  • Sausage is made by combining ground cuts of meat, most traditionally pork, herbs and seasoning, it is then funnelled into a natural hog casing to make a sausage. Our sausages are hand-made using traditional methods in our on-farm butchery. What’s important to us is letting the quality of our slow-grown organic meat shine through. That means only natural ingredients, in their purest forms, and definitely never, ever any nasty fillers, preservatives or additives. We add organic Scottish oats to each recipe to create a texture with hearty bite and substance, and a mix of organic herbs and spices to enhance the flavour of the meat. And because we use organic meat reared in a high-welfare system, we’re confident we’ve got flavour covered.

  • When choosing any meat to purchase, it is worth carrying out some research. There are a number of studies that suggest organic pork is a healthier option – higher in Omega 3, Amino Acids and Healthy Fats. There are also several other reasons why choosing organic pork is a good idea. They range from the contribution of organic pork to climate change, animal welfare and the use of pesticides and medicines used in the farming of conventional pork animals having a detrimental effect on our health.

  • Organic pork comes from organic pigs that have been reared in accordance to high welfare standards, we there are raised a nature intended, they live active lives outdoors, foraging and exercising freely. Our pigs are slow grown unlike intensive farming, this gives their muscles deep colour and robust flavour.
