WHO ARE COOMBE FARM ORGANIC?

We produce award-winning pork, beef and lamb on our organic farm in Somerset. Rearing livestock to the rigorous organic standards laid down by the Soil Association isn’t just a case of ticking a few boxes and filling in some forms. It shapes the basis for everything we do at The Organic Butchery.

WHAT IS ORGANIC BONE & BROTH

We make use of every part of the carcass - right down to the bones. They are an amazing resource, packed full of vitamins, collagen and health-giving fats. Our broth is expertly made by the Borough Broth Co. using organic ingredients and their own special technique to extract the best flavour from British carcasses.

Ingredients

  • 500g organic chicken carcass
  • 6 cups of water
  • 1 tbsp olive oil
  • 1 tsp coarse pink himalayan salt
  • 1 tsp organic peppercorns
  • 10ml Willy's apple cider vinegar
  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 1 onion, chopped
  • 2 organic dried bay leaves
  • sprig of thyme

Method

  1. Into a large stock pot, heat the olive oil and add the organic chicken carcass,  allow the organic chicken carcass to brown before adding the chopped carrots, celery and onion
  2. Add the bay leaves, sprigs of thyme and season with coarse pink Himalayan salt and peppercorns
  3. Add the Willy's Apple Cider Vinegar and the cups of water to the large stock pot, ensuring the organic chicken carcass and vegetable mix are covered, add more water if needed. Turn the heat to low, and simmer uncovered
  4. Keep checking your broth, and once the fat layer rises to the top, remove with a spoon.
  5. Continue to simmer the for 4 hours, topping up with more water as it simmers. When the broth is ready, remove the carcass and strain the rest through a fine sieve and you'll be left with a delicious chicken broth, which can be added to soups, gravies or simply enjoyed on its own

Frequently asked questions

  • Bone broth is a healthy addition to a balanced diet – research indicates that it’s the protein in broth that’s the main advantage to our health. This protein is broken down into collagen which promotes elasticity for firm smooth skin and glycine and glutamine which both promote a healthy immune system and gut lining. Adding vegetables towards to the end of the cooking time is a great way to increase its minerals and vitamin content.

  • Bone broth diets have become popular in recent years, there are many versions out there but essentially, they work by replacing meals with cups of bone broth. This replacement of meals reduces calorie intake, which is what you need to achieve weight loss, otherwise known as a calorie deficit = A calorie deficit occurs when you consume fewer calories than your body expends. We at Coombe Farm Organic do not encourage a diet where you sustain yourself purely on drinking broth and instead encourage a well-balanced diet and suggest seeking medical advice before taking on any new diet.

  • At Coombe Farm Organic we don’t like to see anything go to waste and knowing the nutritional value that organic grass-fed bones gives you, we stock an extensive range of organic bones available for you to buy on our website, ready for you to make into broth or stock.

  • At Coombe Farm Organic we have a great selection of organic bone broth flavours but if you’re looking for a broth high in collagen and protein then organic lamb bone broth is a clear winner, with higher levels of protein and collagen than its counterparts.
