Marry Me Chicken with Organic Chicken Thighs

Ingredients

  • 6 Organic Chicken Thighs (skinless & boneless)

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp chilli flakes (optional, for gentle heat)

  • 150ml chicken stock

  • 200ml double cream

  • 75g grated Parmesan cheese

  • 80g sun-dried tomatoes, chopped

  • Salt & freshly ground black pepper

  • Fresh basil, to garnish


Method

  1. Prep the chicken: Season the chicken thighs with salt and pepper. Heat olive oil in a large pan over medium-high heat and sear the thighs on each side for 4–5 minutes until golden. Remove from the pan and set aside.

  2. Make the sauce: In the same pan, add the garlic and cook for 1 minute until fragrant. Stir in the oregano, thyme, and chilli flakes.

  3. Add liquid base: Pour in the chicken stock and scrape any caramelised bits from the bottom of the pan. Reduce slightly, then stir in the double cream and Parmesan. Simmer until the sauce begins to thicken.

  4. Bring it all together: Add the sun-dried tomatoes and return the chicken thighs to the pan. Simmer gently for 10–15 minutes, or until the chicken is cooked through (74°C internal temperature).

  5. Serve: Garnish with fresh basil leaves and an extra sprinkle of Parmesan.
