Best Autumn/Winter Recipes for Chicken Wings

Chicken wings may be the ultimate summer BBQ favourite, but they also shine in autumn and winter recipes. Whether baked, braised, or spiced, they’re versatile enough to star in comforting dinners or sharing platters for cosy nights in.

Here are three of our favourite autumn and winter chicken wing recipes – perfect for using our Organic Chicken Wings from The Organic Butchery.


1. Sticky Maple & Mustard Chicken Wings

Description:
Sweet, sticky, and warming, these wings bring together classic winter flavours of maple syrup and wholegrain mustard. They’re perfect as a festive appetiser or served with roasted root vegetables for a hearty meal.

Ingredients:

  • 1kg Organic Chicken Wings

  • 3 tbsp maple syrup

  • 2 tbsp wholegrain mustard

  • 2 tbsp soy sauce (or tamari for gluten-free)

  • 1 clove garlic, minced

  • Salt & pepper to taste

Method:

  1. Preheat the oven to 200°C (fan 180°C).

  2. Mix maple syrup, mustard, soy sauce, garlic, salt, and pepper in a bowl.

  3. Coat the chicken wings thoroughly in the marinade. Leave for 20 minutes (optional for extra flavour).

  4. Place wings on a lined baking tray and roast for 35–40 minutes, turning halfway, until golden, sticky, and caramelised.

  5. Serve warm, garnished with fresh thyme or rosemary.


2. Spiced Mulled Wine Chicken Wings

Description:
Think mulled wine in wing form! With warming spices like cinnamon and cloves, these wings are infused with festive flavour – perfect for Christmas parties or cosy nights by the fire.

Ingredients:

  • 1kg Organic Chicken Wings

  • 200ml red wine

  • 2 tbsp honey

  • 1 tbsp balsamic vinegar

  • 1 cinnamon stick

  • 3 cloves

  • 2 star anise

  • 1 orange, zest and juice

  • Pinch of nutmeg

  • Salt & pepper

Method:

  1. In a saucepan, combine red wine, honey, vinegar, spices, orange juice, and zest. Simmer gently for 10 minutes to infuse.

  2. Cool slightly, then pour over chicken wings in a large bowl. Marinate for at least 1 hour (overnight best).

  3. Preheat oven to 190°C (fan 170°C). Place marinated wings on a baking tray, reserving liquid.

  4. Roast for 40 minutes, basting occasionally with the mulled wine glaze.

  5. Finish under the grill for a caramelised edge, then serve with a scattering of pomegranate seeds for colour.


3. Braised Chicken Wings with Root Vegetables & Herbs

Description:
A comforting one-pot dish, perfect for Sunday suppers. Slow-braised chicken wings pair beautifully with seasonal root veg and aromatic herbs, creating a warming stew full of depth and flavour.

Ingredients:

  • 1kg Organic Chicken Wings

  • 2 carrots, chopped

  • 2 parsnips, chopped

  • 1 leek, sliced

  • 2 cloves garlic, crushed

  • 1 sprig rosemary

  • 2 sprigs thyme

  • 500ml chicken stock

  • 1 tbsp olive oil

  • Salt & pepper

Method:

  1. Heat oil in a large casserole dish. Brown the chicken wings on all sides, then remove and set aside.

  2. Add carrots, parsnips, leek, and garlic to the dish. Cook for 5 minutes until softened.

  3. Return the wings to the pot, add rosemary, thyme, and stock. Bring to a simmer.

  4. Cover and braise in the oven at 160°C (fan 140°C) for 1.5 hours, until wings are tender and vegetables cooked through.

  5. Serve with crusty bread or creamy mash for a hearty, warming meal.
