Pork & Apple Cider Chops with Sage

There are some flavour pairings that simply never fail — and pork with apple is one of them. Sweet, tangy apples and savoury organic pork are a match made in culinary heaven, especially when brought together in a rich cider and sage sauce. Using our Organic Pork Loin Chops, this recipe is hearty, comforting, and perfect for those chillier autumn and winter evenings.


Ingredients (Serves 2)

  • 2 Organic Pork Loin Chops (1 per person)

  • Olive oil, for frying

  • 1 white onion, sliced

  • 3–4 eating apples, peeled and sliced

  • 300ml cider

  • 1 organic chicken stock pot

  • 1 tbsp Dijon mustard

  • A small handful of fresh sage, chopped

  • Salt & black pepper, to season

  • 2 tsp cornflour mixed with cold water (optional, for thickening)


Method

  1. Prepare the chops
    Score the fat on each pork loin chop and season generously with salt and black pepper.

  2. Brown the meat
    Heat a drizzle of olive oil in a pan with a lid. Place the chops skin-side down to crisp up the fat and render it slightly. Then sear on each side until golden brown. Remove from the pan and set aside.

  3. Cook the base
    In the same pan, add the sliced onion and apples. Sauté for a few minutes until they begin to soften.

  4. Build the sauce
    Pour in the cider and stir through the chicken stock pot. Let it simmer for a few minutes before adding Dijon mustard, chopped sage, and seasoning.

  5. Finish cooking
    Return the chops to the pan, reduce the heat, cover with a lid, and cook gently for 10–15 minutes until the pork is cooked through.

  6. Thicken the sauce (optional)
    If the sauce is still a little runny, stir in the cornflour slurry and allow it to thicken.

  7. Serve & enjoy
    Plate the chops alongside creamy mashed potatoes and buttery sautéed leeks. Spoon over the cider and apple sauce, and enjoy a dish that feels like a hug on a plate.
