How to Cook the Perfect Three Bird Roast this Christmas

A true showstopper, our Organic Butchery Three Bird Roast is wrapped in a beautiful lattice of bacon, filled with a festive stuffing, and ready to take centre stage at your Christmas feast. To help you make the most of this decadent centrepiece, we’ve put together a simple step-by-step guide to ensure your roast is cooked to perfection — juicy, golden, and utterly unforgettable.
Preparation

Take the roast out of the fridge 1 hour before cooking to bring it to room temperature.

Place seam-side down in a roasting tin.

Add around 200ml of stock or water to the tin to keep the meat moist and to enrich your gravy.

Because the joint is wrapped in bacon, there’s no need to fully foil it — but if you’re concerned about the bacon colouring too quickly, loosely cover with foil for the first half of the cook.
Cooking Time

Fan oven: 160°C

Conventional oven: 180°C

Gas mark: 4
As a rule of thumb, allow 40 minutes per kg.
For example:

A 2.5kg roast = approximately 1 hr 40 mins (allow up to 2 hrs depending on your oven).

Begin checking from 1 hr 40 mins onwards.
Checking Doneness
The most reliable way to check is with a meat thermometer:

Insert into the centre of the stuffing — it must reach 74°C (165°F).

Also test the thickest part of the meat to be sure.
If you don’t have a thermometer:

Pierce the very centre with a skewer or knife — the juices should run clear and hot, not pink.
Resting

Once cooked, remove from the oven and cover loosely with foil.

Allow to rest for 30 minutes before carving. This ensures the juices redistribute, keeping the meat tender and making it easier to slice.

Thanks to the bacon wrapping, there’s no need to baste — the bacon naturally keeps the roast succulent.

If the bacon is browning too quickly, simply place a little foil on top during cooking and remove it for the final 20 minutes for a crisp, golden finish.
