Perhaps it is our natural squeamishness or the slightly unfortunate name, but offal is rarely given the attention it deserves. Offal, also called organ meats, includes the liver, tongue, heart, kidneys and sweetbreads from cows, pigs, sheep, poultry and game after butchery.

Offal as a superfood

Offal is packed with more concentrated essential nutrients than those found in muscle meat. Try these rundown of vitamins and minerals:

Liver is one of the most nutrient-dense foods available, containing high levels of vitamin A, B vitamins (including B12 and folate), iron, zinc, and copper which help support metabolism, immune function, and brain health.

Kidneys are rich in vitamin B12, riboflavin, and selenium to help support immunity and reduce inflammation in the body.

Heart is an excellent source of iron, zinc, and coenzyme Q10, which supports heart health. 

Tongue is a rich source of protein and essential amino acids, supporting muscle growth.

Despite its affordability, offal packs a nutritional punch. Marrow bones, tallow and suet are a particularly versatile and cost-effective option for adding flavour and nutrients to your diet.
