Valentine’s Day is all about indulgence, generosity, and slowing down to enjoy something truly special together. Few cuts capture that spirit quite like a tomahawk steak — dramatic, beautifully marbled, and made for sharing.

Recipe: Organic Tomahawk Steak with Cowboy Butter

Serves 2 to share

Ingredients

For the Tomahawk Steak

For the Cowboy Butter

  • 120g unsalted butter, softened

  • 2 cloves garlic, minced

  • ½ tsp dried chilli flakes

  • 1 tsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • 2 tsp lemon juice

  • 1 tsp smoked paprika

  • 1 tsp fresh thyme, finely chopped

  • 2 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh chives, finely chopped

  • Salt and black pepper, to taste

For the Bacon-Wrapped Asparagus

  • Asparagus spears, trimmed

  • Organic nitrate-free smoked streaky bacon

  • Balsamic glaze, to serve


Method

1. Cook the Tomahawk (Reverse Sear Method)

The reverse sear ensures even cooking and a beautifully tender result.

  • Preheat your oven to 120°C.

  • Season the steak generously on all sides with salt and black pepper.

  • Place the steak on a rack (if possible) over a tray and cook in the oven for 35–45 minutes for medium-rare, depending on thickness.

  • Once the steak reaches your desired doneness, remove it from the oven.

  • Heat a heavy pan until smoking hot. Add a little oil or butter, then sear the steak for 1–2 minutes per side, basting as it cooks, until a deep crust forms.

  • Transfer to a warm plate and rest for 15 minutes before carving.


2. Make the Cowboy Butter

  • Combine all the butter ingredients in a bowl and mix thoroughly.

  • Spoon the mixture onto parchment paper and roll into a sausage shape.

  • Twist the ends and place in the freezer to firm up.

  • Slice into discs when ready to serve.
    This butter can be made ahead and stored in the freezer.


3. Prepare the Bacon-Wrapped Asparagus

  • Preheat the oven to 180°C.

  • Wrap trimmed asparagus spears in smoked streaky bacon.

  • Roast for around 20 minutes, until the bacon is crisp and cooked through.

  • Finish with a drizzle of balsamic glaze.


To Serve

Carve the rested tomahawk steak and top with slices of the cowboy butter, allowing it to melt luxuriously over the hot meat. Serve alongside the bacon-wrapped asparagus, and add roast potatoes or seasonal greens if you wish.
