Honey-Glazed Organic Chicken Drumsticks with Roasted Vegetables

A simple, flavour-packed tray bake that’s perfect for a fuss-free family dinner. Sweet honey, garlic, and fresh herbs balance perfectly with roasted vegetables.
Ingredients

2 tbsp olive oil

3 tbsp runny honey

2 garlic cloves, minced

1 tsp smoked paprika (optional)

1 tsp dried thyme or 2 sprigs fresh thyme

Sea salt and freshly ground black pepper

2 large carrots, cut into sticks

1 red pepper, sliced

1 yellow pepper, sliced

1 red onion, cut into wedges

200g baby potatoes, halved
Method

Preheat the oven to 200°C (180°C fan) / Gas Mark 6 and line a large roasting tray with parchment paper.

Pat the chicken drumsticks dry with kitchen paper and season generously with salt, pepper, and smoked paprika.

In a small bowl, mix the olive oil, honey, garlic, and thyme. Brush this mixture evenly over the drumsticks.

Arrange the drumsticks in the tray and surround them with the carrots, peppers, onion, and baby potatoes.

Roast for 35–40 minutes, turning the chicken halfway, until the drumsticks are golden, cooked through, and the vegetables are tender.

Optional: drizzle over any pan juices before serving for extra flavour.
Butcher’s Tip
Patting the chicken dry before seasoning ensures the skin crisps up beautifully. Using bone-in drumsticks keeps the meat juicy during roasting.
