The humble sandwich, invented on British soil, has since crossed the Atlantic and been unapologetically supersized by our American cousins. Few examples embody this evolution quite like the Philly Cheese Steak: a melting, meaty masterpiece and a celebration of flavour, simplicity and indulgence.

This isn’t just a sandwich—it’s a statement. And when done right, with organic, grass-fed steak and a little care, it’s utterly irresistible.


The Ingredients

The beauty of a Philly Cheese Steak lies in its straightforward assembly. Here’s what you’ll need:

  • 1 large onion, thinly sliced

  • 1 green bell pepper, sliced

  • Good steakribeye or sirloin from @organicbutchery

  • Sea salt & cracked black pepper

  • A few sprigs of thyme

  • Provolone cheese (or a good melting cheese)

  • Fresh hoagie rolls or sub rolls

To serve:
American mustard and pickled chillis (optional, but highly recommended)


Method

  1. Prepare the steak:
    Slice your ribeye or sirloin thinly against the grain. For ease, you can partially freeze the steak beforehand—it helps with clean, thin slices.

  2. Sauté the veg:
    In a hot pan with a dash of oil, cook the onions and green pepper until soft and lightly caramelised. Add the thyme in the last minute to release its aroma.

  3. Cook the steak:
    Remove the veg and turn up the heat. Season the sliced steak generously with salt and pepper, then sear quickly in batches. You want colour without overcooking.

  4. Bring it all together:
    Return the onions and peppers to the pan, mix through the steak, then top with slices of provolone. Cover with a lid for a minute or two to melt the cheese.

  5. Build your sandwich:
    Load the filling into warm hoagie rolls and finish with a generous swipe of American mustard and a few pickled chillis for bite.
